I think you've done it right.
Thinly sliced baby fennel, peeled fresh water chestnuts, watermelon radish, treviso (a kind of chicory), teaspoon of minced pickled ginger, grated clove of garlic (small), juice of one lime, olive oil (really the best you can find), kosher salt, Mixed and let rest for 1/2 hour or so.
For the shrimp I used 10/15 Gulf White peeled and sauteed quickly in a little peanut oil.
